A Recipe//Nightshade Free Chicken Tacos

I have a great recipe for you!

We just tried this for the first time a couple of weeks ago.

I avoid nightshades – which are white potatoes, all peppers, eggplant, tomatoes and any spice derivatives of these things – to help keep inflammation at bay from my autoimmune issues.

Mexican food is harder to do without those nightshades!

This recipe is from my favorite cookbook – Nourishing Meals.

These tacos were a HUGE hit with everyone – so much so that they asked me not to make the regular version of this anymore, but to make this one from now on instead!

Nightshade Free Chicken Tacos

2 pounds boneless skinless chicken breasts
1 1/2 cups cherry or pomegrante juice
one onion cut into moons
3 cloves of garlic minced
1 TBSP olive oil
2 tsp cumin
2 tsp herbed seasoning
1 tsp pepper

Place all in slow cooker. Cook on low 7-8 hours. Shred the chicken and place back in the sauce. Serve in soft or hard shells, or on lettuce in a bowl.
