This recipe is super easy, and super delicious!
These truffles are made with only four ingredients.
Chocolate Truffles
4 cups walnuts
4 cups pitted dates
2 TBSP cocoa
shredded coconut for rolling
Place 2 cups of the walnuts in a food processor fitted with the “s” blade. Pulse until the nuts are chopped. Add 2 cups of dates and 1 TBSP of cocoa and run the food processor until the ingredients come together in a ball. Scoop out the truffle mix into a bowl. Do each step again with the remaining ingredients. If you try to run all the ingredients at one time, it will not come together nicely.
Using your hands, grab a small amount of truffle mix and roll into a ball. I try to make the balls small enough that they are one bite each. Roll each ball in some shredded coconut. Cover and keep in the fridge.
